Amber is Richard Ekkebus's dining room on the seventh floor of The Landmark Mandarin Oriental in Central, holding three Michelin stars and a green star. Since 2018 the kitchen has cooked without butter, cream or most dairy — a rebuild Ekkebus made after his own health scare, and unusual for a French-rooted restaurant at that level.
