Kam Tung Kitchen has spent 35 years on Shau Kei Wan Main Street East cooking Tanka cuisine — the food of Hong Kong's boat-dwelling communities — under chef Po Yau-fai and his wife Ada Kwok Yin-lai. It is a neighbourhood dining room rather than a destination one, which is what makes its guest list unusual: four people who run their own kitchens and shops keep sending others here.
