Sun Kwai Heung (新桂香燒臘) is a small siu mei shop on Chai Wan Road, at the eastern end of Hong Kong Island, best known for its char siu. It took its name when the original Kwai Heung was sold to three of its employees in 1994 — sun means new — and with only a few tables, most of what it roasts leaves as takeaway. The people naming it cook or run restaurants for a living: The Legacy House's Chinese executive chef, Bakehouse founder Grégoire Michaud, chef Lucas Sin, and restaurateur Jeffrey Mui, who has picked it in two separate interviews.
