Red Hook Tavern is Billy Durney's sit-down dining room in Red Hook, Brooklyn, opened a few blocks from Hometown Bar-B-Que, the barbecue restaurant that made his name. Its dry-aged burger is an open homage to Peter Luger's. Three of the four people below cook for a living somewhere else in New York, and all three are here for the burger.
