Josh Fontaine came to Paris in 2008 and, with Carina Soto Velásquez and Adam Tsou, opened a run of bars that reset how the city drinks — Candelaria in 2011, Glass in 2012, Le Mary Celeste in 2013 — and now also runs the apéritif brand Lutèce. Asked by Service95 where he eats and drinks in Paris himself, he named none of his own rooms: a palace-hotel bar, his morning café, a family brasserie, and a new place opened by friends.
