Marcin Król opened Cypsèle on the Île Saint-Louis in November 2025 — his first restaurant of his own, after cooking at Noma in Copenhagen, Boragó in Santiago, Inua in Tokyo and Sota Atsumi's Maison in Paris. He left Poland in 2013 and has been in other people's kitchens ever since. These are the Paris rooms he goes back to.
Dare I say it: my favourite restaurant in the world. There are restaurants you admire, and then there are restaurants you care about. Mokonuts is firmly the latter.
