Vicky Cheng is the chef-owner of VEA and Wing in Hong Kong: French technique on Chinese flavours at VEA, which took a Michelin star in 2017, and the Chinese cooking at Wing, which he opened in 2021 and which placed third on Asia's 50 Best Restaurants in 2025. Hong Kong-born, he trained at Daniel in New York before coming home. These are the places he eats on his own time — supper joints, a Lamma seafood house, a bowl of beef offal noodles round the corner.
