Julien Royer is the chef-owner of Odette, the modern French restaurant inside Singapore’s National Gallery that has held three Michelin stars since 2019 and has been named Asia’s best restaurant. He is in Hong Kong often enough to have a proper list, and it runs from a three-star French dining room to the late-night Cantonese place he says he actually goes to.
It has become a well favorite of many people in Hong Kong and overseas.
