Kiln is a tiny Thai restaurant on Brewer Street in Soho, cooking everything over charcoal in clay pots and woks along a stainless-steel counter you cannot book. It was named National Restaurant of the Year in 2018 and holds a Bib Gourmand in the 2026 Michelin Guide. What makes the list below worth reading is its range: Michelin-starred chefs, a Soho landlord and a couple of visiting film and music names all keep arriving at the same address.

Kiln is my go-to restaurant. It’s a northern/rural Thai restaurant in Soho. I like to sit at the counter where you can watch over the fire and get a real sense of the energy behind the pass. Kiln’s cooking is always really exciting and they have a constantly changing wine list, so I get to try a different wine every time I go.

We're very lucky in London to have some of the best Thai food in the world. Kiln (and the original Smoking Goat) were among the first to bring the bold flavours of Thai cooking to the capital, and it still gets my vote as the best in town. Sitting at the counter, normally with a few other chefs, making our way through the whole menu is a consistent joy on a Monday afternoon, when so many other places are closed.
