The Dusty Knuckle started in 2014 as a bakery in a 40ft shipping container in a Hackney car park, set up as a social enterprise training young people locked out of work and education; it now employs around fifty and has won the King’s Award for Enterprise. Outside the trade it is known for sourdough and very large sandwiches. Thirteen London chefs, restaurant owners and cooks name it when they are asked for the best bakery in the city.
