I love Kiln. I love that smoky flavour of coals. I love the vibe in there, it's not too big.

Just the choice of restaurants alone, all within a stone’s throw of each other, The French House, Kiln, Impala, Barrafina, Noble Rot, the Union Club, Andrew Edmunds, Bao, to name but a few, some old stalwarts, some new, some just opened, all cheek by jowl.

Kiln is my go-to restaurant. It’s a northern/rural Thai restaurant in Soho. I like to sit at the counter where you can watch over the fire and get a real sense of the energy behind the pass. Kiln’s cooking is always really exciting and they have a constantly changing wine list, so I get to try a different wine every time I go.

I go on my own, you sit on the counter. It's ridiculously good value for what it is. I've said Kiln before. Brilliant.

Let's go with the clay pot noodles at Kiln. Crab and pork belly noodles. Clay pot, open flame. Delicious.

We're very lucky in London to have some of the best Thai food in the world. Kiln (and the original Smoking Goat) were among the first to bring the bold flavours of Thai cooking to the capital, and it still gets my vote as the best in town. Sitting at the counter, normally with a few other chefs, making our way through the whole menu is a consistent joy on a Monday afternoon, when so many other places are closed.

I think the monkfish curry at Kiln is the one. It's just umami central.
